It carbonizes, it off-gasses, and it can transfer compounds onto subsequent dishes — including those cooked at lower temperatures where the residue may not fully combust.

Raw meat drippings present a more acute concern. Juices from poultry or beef that fall to the oven floor during cooking can harbor pathogens such as Salmonella or E. coli. While the heat of an active cooking cycle will destroy these organisms on contact, the residue that remains after the cycle completes is a different matter. Cooled and hardened drippings become a substrate for bacterial recolonization, particularly in ovens that are used infrequently or stored in humid kitchen environments.

Third, inspect door seals regularly. The gasket that runs around the oven door is one of the most frequently neglected surfaces in the appliance. Grease and food particles collect in its folds and, if left unaddressed, can become a persistent source of contamination and odor.

Finally, schedule professional cleaning at intervals appropriate to your usage patterns. A household that bakes daily has different maintenance needs than one that uses the oven occasionally.
